The principle of the Portuguese Alambic is quite simple. The copper apparatus is set on fire, the liquid in the distillation cube is heated, the vapors are lifted and discharged through the tube. At some distance from the source of heating, the vapors are cooled and condensed, after which they are collected in a receiving container. Modern modern distillers have one more element - a refrigerator, or a heat exchanger. This capacity, as a rule, is of cylindrical cross section, into which water is supplied for cooling, and through which the copper coil passes, in which steam condenses. The refrigerator is absolutely necessary to reduce alcohol losses and to accelerate the process of distillation.
